Things We Like to Eat

Ok, so I'm running low on good ideas for things to cook and eat around our house. I was thinking of cooking James, but the convenience factor just isn't there. So, I'm asking for all of your help. Every week I make these things:

Stroganoff
Curry
Spaghetti
Fried Chicken
Quesadillas
Macaroni and cheese/Ramen
Little Caesar's Pizza*

These have become sort of family-favorite, staple foods of the Johansen West home, but I have learned I need a little more variety in my life. So, I would like to ask you, my friends and family, what are your family favorites? your easy meals? your meals that you are sick of? One family's staple is another family's exotic meal, so please share!

*Yes, I make it. I make Little Caesar's Pizza. That's my story and I'm sticking to it.

I already gave you a bunch. Also thought I'd mention goulash. I have a great recipe for it. And I love it.

I make something new every week - not one of Oliver's favorite passions of mine. But I am full of good ideas if I do say so myself! And some, that should have stayed ideas and never come to light. heheheh

This is what I made last night - YUM!

Pumpkin French Toast Bake
6 eggs
1/2 a 29 oz can pumpkin
1/2 can (or 6 oz) evaporated milk
1/2 t. cinnamon
1/2 t. vanilla
1/4 c. white sugar
7 or 8 slices white bread, cubed
Powdered Sugar (for decoration)
Maple Syrup

In a very large bowl, whisk together eggs, milk, pumpkin and spices.

Place cubed bread in a 9x9 pan.

Pour egg/pumpkin mixture all over the cubed bread in the 9x9 pan.

Bake uncovered at 350 for 35-40 minutes or until a knife inserted into the center comes out clean.

Dust with confectioners’ sugar. Serve with maple syrup. Serves 6.

Here's the easiest thing to make...

1. Put RICE in the rice cooker...
2. Pam the bottom of a crock pot and throw some frozen CHICKEN BREASTS in there with a bottle of BBQ SAUCE for four-six hours...
3. EAT the BBQ CHICKEN served on the RICE.

VOILA - a meal! Perhaps you could add a vegetable to the mix... hmm, I'm a fan of corn on the cob! (Or corn from a can...)

I made chicken marsala for the first time and it was really easy and yummy! I'll give you the recipe. I've never made stroganoff, you will have to teach me.

Hey, when you live THAT close to a $5 hot-and-ready, it is ILLEGAL to NOT cook them yourself.

Taco soup, pasta and alfredo, rotisserie chicken, chicken tacos, broccoli casserole, hawaiian haystacks, baked chicken, zuchinni omlet, hamburger helper, french dipped sandwiches, BLTs, turkey noodle bake, hot dogs, mini pizzas, chicken pillows, homemade ham and cheese hot pockets. Let me know if you want any of those recipes.

This has been my favorite thing to make lately. It is absolutely fabulous in a bread bowl. Here's the recipe:

Creamy Chicken Soup

4 boneless chicken breasts – cooked and cubed
4 cups chicken broth

Saute: 1 cup chopped celery and 1 small onion

1 pint sour cream
1 large (26oz) can cream of chicken soup
2 cups sliced, cooked carrots
2 cups red potatoes, cooked and cubed

Combine ingredients and simmer for one hour.
